VIVA CHILE!!!!!
Happy Independence Day!!! Today is a very important day in the Chilean culture and every year for as long as my parents have been in the US, they've made it an important day for all of us to remember our heritage. The house is all decked out with flags and pictures of the Chilean countryside and soon we'll be making the yummy food of our country. Granted b/c of the day of the week, we decided to do it tomorrow instead but that's ok b/c it still follows the traditions of the land.
In 2000, we all took a trip down there for the 18th and we literally learned that the country shuts down for 3 days! The 17th through the 19th is all about cooking and partying. With special parades and non-stop eating and drinking, we had a really great time. This was Joe's only trip to Chile and one I assure you he'll never forget. Someday I'll hopefully post a few pics from the trip but here's an article explaining it all.
